Dear Adam & Sandy,

What a nice posting. I became a "regular" at Oink during my first visit to Edinburgh for the Fringe this summer, and I found the customer service friendly and efficient at every visit. As an American who is very familiar with Southern-style pulled pork sandwiches, I have to say that your version is without a doubt the best I have ever had. I will be consuming mass quantities of Oink sandwiches when I return to the Fringe next summer!

Dear Customers of Oink,
We are Scottish Borders farmers Adam Marshall and Sandy Pate who own and operate Oink in Edinburgh. In light of recent negative comments regarding the poor customer service within Oink we would firstly like to offer our sincere apologies to customers and would also like to reassure everyone that we have taken very strong action to ensure that this never happens again. Our customers are our number one priority and we will not tolerate this kind of behaviour and expect all our staff whether within Oink itself or at the Edinburgh Farmers Market to offer excellent customer service at all times.
We work very hard to deliver an honest, quality product to our customers - our pigs are reared on our farms, we cook them in specialist ovens and drive them up to Edinburgh from the Borders each day.
We really do value our customers and have taken on board this feedback fully, we sincerely hope that you will continue to support Oink and enjoy our quality Scottish product.

What a find, a great place to take the kids for a treat, mine love it and actually ask to go there rather than other places to eat. I love the crackling too!

Pretty tasty, but pretty expensive too - it's up to £4.60 now, and was way cheaper when it opened. You can get a cold one for £2.30, but it's yesterday pig, and has loads of fat on it. Also, the last time I went in there, the woman who runs the place was really rude to me, for literally no reason at all. Even the other girl who works there was uncomfortable with it. So I won't be going back now unfortunately. It doesn't take much effort to be pleasant; it actually takes effort to be rude. Shame. I'll stick to 'Hula' down the road now - tastier, and healthier too.

I've had the hog roast roll from Oink's van at the Castle Terrace farmers' market. It's the most delicious sandwich I have ever had, and personally I think that the crackling is essential and no other topping is needed. The meat is beautifully seasoned and aromatic and the crackling gives it essential crunch.

This place is great. I actually like the cracklings quite a bit, although I agree that they can be somewhat hard to get through. I love restaurants that do one thing and do it very well.
